Keeping Your Meals “Grounded”

ground meat recipesWhile exchanging messages and ideas with my fellow PMC contributing writers I was asked if I could write a post about easy-to-freeze meals. My cooking is more about quick and fresh recipes rather than time-consuming weekly meal prep. BUT, there is one thing that is worth the hassle and freezes great, GROUND MEAT! 

Ground meat recipes usually require spices and aromatic ingredients that help maintain the texture and flavor. Freezing it and reheating it barely changes its nature. It freezes well raw and pre-seasoned or cooked. If you freeze a precooked chicken breast, steak, or pork tenderloin filet when the time comes to eat it, you will not be pleased. The taste and texture become completely altered. It’s either too dry or takes an unpleasant, fish-like after-taste. 

Tip: If you have to thaw and preheat any of the other cooked proteins I suggest doing it in the oven at a low temperature (250-300°F). Don’t microwave!

This a great budget-friendly recipe. I normally buy lean ground beef in bulk. Feel free to replace it with your preferred ground protein (pork, turkey, chicken, Beyond Meat).

I can do a LOT WITH 5 LBS of ground meat! My secret ingredients when cooking it are ground Cumin and Adobo Goya. These are a ‘must have’ in your spice rack.
