I love football season; the games are good and the snacks are great. I’m sharing my Top Five easy football snacks (in no particular order).

Homemade Salsa

football snack recipesMy husband’s salsa is more of a pico de gallo, it is not saucy so if that is your jam too, this quick recipe is for you. 

Recipe:
5 vine ripe tomatoes
½ large white onion
1 bunch of Cilantro (it’s packaged at the grocery stores in bunches)
½ lime – juiced
Salt to taste, approximately 1 tsp

Dice the tomatoes & chop the white onions, we like using the food processor to get the pieces very small. Add the cilantro, fresh lime juice, and salt. We find this salsa typically tastes better if you prepare it the day before and let it sit in the refrigerator overnight. Serve with tortilla chips.

Corn Dip

I first tasted this dip about 13 years ago when a friend brought it to a football party. I quickly got her recipe and now every time I serve this dip, I’m asked for the recipe! This one is always a crowd favorite.

Recipe:
2 cans of Fiesta Corn (drained)
2 cans of Rotel Tomatoes (drained)
1 cup of sour cream
1 cup of mayonnaise
1 cup of sliced green onions
3 cups of Fiesta shredded cheese

In a mixing bowl, start by combining the corn, Rotel, and green onions. Next, add the sour cream & mayonnaise. I like to use a little more mayonnaise than sour cream, 1 cup is a guideline, but you may want to add a little more of one or the other depending on your preference. Finally, I add the cheese and mix it all together. This recipe is also better if you have time to make it the day before and let it sit in the refrigerator overnight. Serve with Fritos.

Hamburger Sliders

Recipe:
1 12 pack of dinner rolls (we like to use Hawaiian Rolls)
2lbs of ground beef
¼ large white onion (chopped small, food processor works great)
¼ cup Dale’s steak seasoning sauce
¼ cup grated parmesan cheese
2 tablespoons of butter
Salt & Pepper

Condiment Options: Pickles, Mustard, Ketchup, Cheese

Combine ground beef with chopped onions, Dale’s Sauce, parmesan cheese, salt & pepper. Press meat into a 9×13 baking sheet and bake at 350 degrees for 20 minutes.
While the meat is baking, slice rolls in half to separate tops and bottoms. Layer another 9×13 pan with the bread bottoms. If desired, spread mustard and/or ketchup on the bread bottoms.

After the ground beef is done baking, drain excess grease and put meat on top of bread without cutting it. Add cheese and/or pickles if desired and cover the meat with the bread tops.

Melt butter and pour on top of buns. Bake sliders until cheese is melted, approximately 20 more minutes.

Chex Mix

This is so easy, I’m not sure if it even qualifies as a recipe!

Recipe:
2 tablespoons of olive oil
1 package of ranch dressing seasoning
1 cup of Chex Cereal
1 cup of pretzel sticks
1 cup of cheese crackers (my family like Cheez-Its)
1 cup of mixed nuts
Pour olive oil into a gallon-sized zip loc bag. Add cereal, pretzels, cheese crackers, nuts, and ranch dressing seasoning. Seal the bag & shake! Pour into your favorite serving bowl and it’s ready to serve.

Buffalo Chicken Dip

My buffalo chicken dip recipe gives you all of the spicy, buffalo flavors without the mess of chicken wings. And added bonus: it’s a crockpot dip so throw it all in and let your crockpot do the work.

1.5 lbs of shredded, cooked chicken (or substitute canned chicken)
1 8oz package of cream cheese
1 cup of ranch dressing
1 cup of buffalo wing sauce
2 cups of Fiesta shredded cheese

Add all of the ingredients to your crockpot & cook on low for 3-4 hours stirring occasionally. For Bleu Cheese lovers like my husband – sprinkle with Bleu Cheese crumbles and serve with crackers, celery, & carrots. Disclaimer – this is not the prettiest dish but it is delicious!
