I do! I do!

Here are some easy soup recipes I’ve found to be quick, delicious, and perfect for fall.

Easy Tomato Soup:A bowl of tomato soup

My favorite thing about this one is it’s only three ingredients. I first made this soup because I was trying to impress a man, but he didn’t seem to realize it’s amazingness. I now make it to impress myself, plus it’s magical alongside a grilled cheese.

Roasted Butternut Squash Soup:

I’m a sucker for creamy soups, but I don’t love how tight my pants feel the next day. Butternut Squash soup screams autumn AND has a creamy texture without all the milk and cream. Thank you, Mother Nature! We usually serve this one with a salad since the soup is so filling. On days when I can’t fathom having the energy to cook the squash in the oven, I use frozen squash instead.

If the kids won’t eat broccoli covered in cheese, then at least you’ll have the best leftovers for lunch the next day. I’m not trying to pretend that this is the healthiest option for dinner, but it does have broccoli AND carrots, so there’s that.

French Onion Soup:

I used to think this soup could only be made by a professional chef in a restaurant kitchen! This “fancy” soup is a bit extra, but I found that a glass of wine, as the onions caramelize, makes the longer prep time feel slightly luxurious. This recipe calls for beef stock, but I used vegetable stock, and it was still insanely delicious.

Crockpot Taco Soup:

This one is awesome because it can be made with pantry staples most of us have on hand. I use this recipe when I know we’re all going to be eating at different times or we might be getting home late from open house or dance practice. This way, it’s all ready to go, and everyone in the house will eat it.

Tips to save time:

Buy some bread or rolls that pop into the oven with no prep. There’s something SO perfect about bread fresh out of the oven to go with soup. Even the pickiest eaters will eat their vegetable soup in order to have another roll.

Not into the carbs? Have some pre-bagged salads on hand to use at any time during the week, and feel good about feeding your family vegetables.

Let’s face it…anytime we can get our children to eat vegetables, or when we eat them ourselves, we’re winning.
